Recipe for Veg Puffs
Veg Puffs and Egg Puffs are common snacks available in bakeries in India. These snacks are quite popular in Bangalore, where I have lived for long. Bangalore’s famous Iyengar bakeries, found on almost every other street, are famous for delicacies like Masala Bread, Aalu bun, Sponge cake, veg puffs and egg puffs. Around the evening, it is common to see people standing outside these bakeries, enjoying these snacks with a cup of tea or coffee. Both veg puffs and egg puffs are reasonably priced and pocket-friendly. In addition, they fill you up; hence, they have found wide acceptance amongst people. And needless to say, they are tasty.
Today, I am sharing the recipe for veg puffs inspired by the bakeries in Bangalore. I have made these with ready-made pastry sheets that are easily available in the refrigerator section of supermarkets in Germany. Although pastry sheets can be made at home, the process is tedious and time-consuming.
These puffs are a great snack option for a house party, as picnic snacks or even as once-in-a-while cheat food for children’s lunch boxes.
So, let’s start with the recipe.
Ingredients needed for making Veg Puffs:
- Pastry Sheets: 2 (for 24 puffs)
- Oil: 2 tablespoons
- Potatoes: 8-10, medium-sized, boiled and mashed
- Peas: 1/2 cup
- Capsicum: 1, chopped
- Ginger: Finely chopped, 1 tablespoon
- Green Chilies: finely chopped, 1 tablespoon
- Salt: 2 teaspoons
- Cumin Powder: 1 teaspoon
- Dry Mango Powder: 1 teaspoon
- Kashmiri Red Chili Powder: 1 teaspoon
Method to make Veg Puffs:
- Heat oil in a pan. Add green chillies and ginger and fry them on medium heat.
- Then, add peas, followed by capsicum and fry them till they are cooked.
- Add the mashed potatoes.
- Add salt, cumin powder, dry mango powder and Kashmiri red chilli powder and mix well.
- Turn off the heat. Let this mixture cool completely.
- Cut the pastry sheet into equal-sized rectangles with the help of a knife.
- Put portions of the potato mix on each cut-out portion of the pastry sheet. Fold it and seal it from all sides by pressing the dough together.
- Preheat the oven to 200 degrees C for 10 minutes. Line a baking tray with a baking sheet. Place the puffs on the pastry sheet and bake for about 25-30 minutes, or as per the instructions on the packing.
- Take them out and let them cool for about 10 minutes on a wire rack before serving.

Notes
- For my readers in Germany, the pasty sheets are called ‘ Blätterteig‘ in German. They are easily available in supermarkets.
