Recipe for Egg Fried Rice
India has a popular street food culture. By evening, streets in India get lined with stalls by street food vendors, who sell freshly made foods of various varieties ranging from chats, samosas, juice, paranthas, idly, dosa etc. One food type that has gained popularity in the street food circuit is Chinese-inspired noodles, fried rice, Manchurian etc. Of course, we didn’t get authentic Chinese food on the streets of India. But what we get tastes delicious and suits the Indian palette.
The Indian Chinese version of these dishes is customized to Indian tastes. These can be called fusion foods as they use many chines inspired sauces and spices and combine them with some Indian ones to create something absolutely delicious, and mouth-watering-which explains the growing popularity of this food all across the country.
My today’s recipe is inspired by Chinese street food from India. You will find many versions of Egg Fried rice on the Internet, but the one I am sharing today is customised to suit my palette. It tastes fantastic and is my go-to recipe for making something quick yet filling and nutritious.
So, let’s start with the recipe:
Ingredients needed to make Egg Fried Rice:
For Preparing the Eggs
- 4 Eggs
- 1 tsp Sesame Oil
Other Ingredients
- 4 cups Cooked Rice ( It is ideal to use the previous day’s cooked rice that has cooled at room temperature. However, if you use freshly cooked rice, please ensure that it cools completely before you use it in the recipe).
- 2 tbsp Sesame Oil
- 2-3 Cloves Garlic, finely chopped
- 1 Medium-Sized Onion. finely chopped
- 2 Green Chillies, finely chopped
- 1 tbsp Spring Onion Greens, finely chopped
- 450 gm Asian Wok Veggies ( I used frozen vegetables. If you want to use fresh vegetables, you can use a combination of carrots, capsicum, beans, cabbage, mushrooms etc. Finely chop them and use)
- 1 tsp Soy Sauce
- Salt, to taste
- 1 pinch MSG ( Agino Moto)
- ½ tsp Black Pepper Sauce
- ½ tsp Green Chilli Sauce
- ½ tsp Oyster Sauce
- 1 tsp Rice Vinegar
- 2 tbsp Spring Onion Greens, finely chopped (for garnishing)
Method to make Egg Fried Rice:
- Heat oil in a pan. Add Eggs.
- Scramble them. When they are cooked, keep them aside.
- In a bid Kadhai/Wok, heat oil. On high heat, fry garlic and green chillies. Please note that the heat should be on high for the rest of the steps. Keep tossing or mixing with a spatula to avoid burning.
- When they brown a bit, add regular onions and spring onion greens.
- Fry them till they soften and turn translucent.
- Now add the veggies.
- Add soy sauce, salt, green chilli sauce, vinegar, black pepper sauce, oyster sauce and MSG.
- Add rice.
- Toss it and combine the rice with the veggies and the sauces.
- Now, crumble the cooked eggs and add them. Give a quick mix.
- Garnish with finely chopped spring onion greens and serve.
