Recipe for Khao Suey

Khao Suey is a Burmese noodle soup dish. In this dish, noodles are made two ways- boiled and fried, and served with a soup made from coconut milk combined with meat or vegetables. In addition, it is garnished with various ingredients giving it multiple textures and multidimensional flavors. The taste of the dish is absolutely delicious. 

The recipe that I am sharing today is a vegetarian one. However, you can add any meat of your choice.

The dish has three components:

  1. Coconut and Vegetable Soup
  2. Noodles
  3. Garnishing Ingredients

Since the dish has different components, I am breaking the recipe into four parts:

PART 1: Preparing the Coconut and Vegetable Soup

PART 2: Preparing the Noodles

PART 3: Preparing the ingredients needed for garnishing

PART 4: Assembling and plating

This recipe is for four portions. Let’s start.

PART 1: Preparing the Coconut and Vegetable Soup

Ingredients needed for making Coconut and Vegetable Soup:

  1. Green chillies: 2-3
  2. Ginger and garlic paste: 2 tablespoons
  3. Onion: 2, Medium-sized
  4. Fresh Coriander stems: 8-10
  5. Oil: 2 tablespoons
  6. Vegetables of your choice( peas, carrots, capsicum, zucchini, mushrooms etc): Chopped, about 2-3 cups
  7. Coconut milk: 400 ml
  8. Turmeric Powder: 1 teaspoon
  9. Red chilli Powder: 1 teaspoon
  10. Cumin Powder: 1/2 teaspoon
  11. Coriander Powder: 1 teaspoon
  12. Salt: 2 teaspoons

Method to make Coconut and Vegetable Soup:

  1. Make a paste of onions, green chillies, coriander stems, ginger, and garlic.
  2. Heat oil in a deep-bottomed pan. Fry the paste prepared in step 1 on medium heat for about 7-8 minutes.


  3. Now add all the vegetables. Mix everything. Add turmeric powder, cumin powder, coriander powder, and red chilli powder. Cover with a lid and let the vegetables cook completely.


  4. Now add coconut milk. Mix everything. When it comes to a boil, add salt. Turn off the heat.

PART 2: Preparing the Noodles

Here, Noodles are made two ways- boiled noodles and fried noodles.

Ingredients needed:

  1. Noodles: 250 gm
  2. Water: Enough to boil the noodles
  3. Oil: 1 teaspoon
  4. Salt: 1/2 teaspoon
  5. Oil: To deep fry the noodles

Preparing the Noodles:

  1. Boil water in a pot. The water should be enough to immerse the noodles completely.
  2. Add one teaspoon of oil and 1/2 teaspoon salt.
  3. When the water comes to a boil, add the noodles. Cook as per the instructions on the pack. 


  4. Drain out the water once the noodles are cooked. 
  5. Keep the boiled noodles aside. 
  6. Out of these boiled noodles, take out some ( about 1/5th). Fry them in oil till they are light brown. Keep aside.

PART 3: Preparing the ingredients needed for garnishing

Ingredients needed for garnishing:

  1. Roasted and coarsely ground peanuts: 4 tablespoons
  2. Fried Onions( Birista): 4 tablespoons
  3. Chili Oil: A few drops for each serving ( Ingredients needed: 1 teaspoon Red chilli powder, one teaspoon red chilli flakes, four tablespoons oil)
  4. Finely chopped fresh coriander leaves: 2 tablespoons
  5. Onion: 1 medium-sized, sliced

In addition, you need:

  1. Eggs: 4, soft-boiled.

Amongst the ingredients needed for garnishing, let me take you through making chili oil and roasted peanuts.

Preparing Chili Oil:

  1. In a heat-resistant bowl, put chilli powder and chilli flakes.
  2. Now heat oil in a pan and add the hot oil to this bowl containing the chilli powder and flakes. Chili Oil is ready.

Preparing roasted peanuts:

  1. Dry roast peanuts on medium heat in a pan. 
  2. When fully roasted, take off the heat. 
  3. When cooled, remove the skins.
  4. Then coarsely grind them in a mixer.

PART 4: Assembling and plating

  1. In a serving plate, first, serve a portion of boiled noodles.


  2. Then add fried noodles.


  3. Then pour the coconut and vegetable soup.


  4. Then garnish with fried onions, peanuts, thinly sliced onions, a few drops of chilli oil, and finely chopped fresh coriander leaves and eggs. Serve hot.

Some additional Notes:

  1. Since the recipe has many components, it can get tedious to prepare everything. You can reduce your effort using canned coconut milk, packaged fried onions, and pre-roasted peanuts.
  2. I have used canned coconut milk in the recipe. You can also prepare it at home using one whole coconut and grinding it in the mixie with water, and extracting the milk by straining it.
  3. I have used packaged fried onions. However, you can make them at home by frying thinly sliced onions in oil till they are light brown.
  4. As mentioned, you can also make a non-veg version of Khao Suey. Add any meat you choose, like chicken or fish, after Step 2 in Part 1 of the recipe.
