Cheesy Nachos
An easy-to-make, delicious party snack made with tortilla chips, veggies and cheese. Serve with sour cream dip.

- 600 gm Tortilla Chips
- 2 Medium-Sized Onions; Chopped
- 2 Medium-Sized Tomatoes; deseeded and chopped
- 1 Medium-Sized Capsicum; deseeded and Chopped
- 600 gm Chicken Breast; steamed and shredded
- 8-10 Canned Olives; Chopped
- 8-10 Canned Jalapenos; Chopped
- 400 gm Canned Kidney Beans
- 500 gm Shredded Cheese of your choice ( mozzarella, gouda,cheddar)
- 1 tsp Paprika Powder
Preheat the oven to 200 deg C for 10 minutes.
In a mixing bowl, combine chopped onions, tomatoes, capsicum, olives, jalapenos, kidney beans, chicken and paprika powder. Toss and mix.
Grease a pizza plate with oil. Spread the tortilla chips evenly on the plate.
Layer it with a generous amount of the vegetable and chicken mix.
Top it with shredded cheese and bake it for 6-8 minutes at 200 deg C.
Serve with sour cream dip.
This way, make several batches of Cheesy Nachos.
