Chicken and Cheese Sandwich

Easy to make chicken patty stuffed with cheese, sandwiched between slices of bread and grilled to perfection. A great lunchbox recipe.

- 600 gm Chicken Breast; minced
- 1 Cup Finely Chopped veggies (Cabbage, Capsicum, Beans, onion etc)
- 3-4 Green Chillies; Finely Chopped
- 1½ tsp Dried Italian Herbs
- 1½ tsp Salt
- 3-4 tbsp Finely Chopped Fresh Coriander Leaves
- ½ Cup Grated Cheese
- 4 tbsp Puffed Amaranth
- Oil for frying the patties
- 12 Slices Bread
In a mixing bowl, combine minced chicken, veggies, green chillies, coriander, salt, Italian seasoning and puffed amaranth.
Mix well.
Take a portion of this mixture and flatten it. Stuff it with grated cheese. Then close it. Give it a shape of your prefarence.
Shallow fry on medium-hot oil.
Place this patty between slices of bread. Add cheese slices and grill.
Let the sandwich cool before packing it in the lunchbox.
