- 8 Medium-Sized Eggs
- 16 Slices White Sandwich bread
- 2 tbsp Fresh Thick Cream
- Salt; to taste
- Butter; to apply on the bread slices
- ½ tsp Crushed Black Pepper
- 3 tbsp Finely Chopped Coriander Leaves
Boil the eggs. I prefer hard-boiled eggs for this recipe.
Cut the edges of the bread slices.
Toast them lightly on a grill or pan.
Apply butter on the slices and keep them aside.
Once the eggs are boiled, peel them and cut them roughly.
Transfer them to a mixing bowl.
In the mixing bowl, combine eggs with salt, black pepper, coriander leaves and fresh cream. Mix well.
Take a slice of bread. Spread a portion of the egg mixture on it. Cover with another slice of bread. This way, make all eight sandwiches.
Serve as is or pair the sandwiches with tomato ketchup.
