Flammkuchen is a popular baked delicacy from Germany, in which a dough made with refined flour is thinly rolled, smeared with cream and topped with meat and veggies, and then baked to perfection.

Ingredients
  

Ingredients for the dough

  • 500 gm Refined Wheat Flour (Type 550)
  • 3 Egg Yellows
  • 225 ml Lukewarm water
  • 4 tbsp Olive Oil
  • 1 tsp Salt

Ingredients for the Topping

Vegetarian

  • Green Asparagus; thinly sliced and seasoned with salt and black pepper
  • Onions: Thinly sliced and seasoned with salt and pepper
  • Sour Cream ( Crème Fraîche or Schmand) to smear on the flammkuchen before baking
  • Fresh or dry Chives (Schnittlauch)
  • Any Salad Greens; for garnishing
  • Salt; to taste
  • Crushed Black Pepper; to taste

Meat Based

  • Bacon
  • Onions: Thinly sliced and seasoned with salt and pepper
  • Sour Cream ( Crème Fraîche or Schmand) to smear on the flammkuchen before baking
  • Fresh or dry Chives (Schnittlauch)
  • Any Salad Greens; for garnishing
  • Salt; to taste
  • Crushed Black Pepper; to taste

Instructions
 

  • Combine flour and salt.
  • Add eggs. Mix well.
  • Add water and knead a smooth dough.
  • Add oil and massage, and knead the dough for 7-8 minutes.
  • Cover and rest the dough for an hour.
  • After the dough has rested, divide it into 8 parts.
  • Turn on the oven. Preheat it at 250 deg C for 10 minutes.
  • Roll the dough. Roll it thin. Use dry flour to help with rolling.
  • Spread a generous amount of sour cream on the rolled dough. Sprinkle some salt.
  • Put the toppings of your choice.
  • Bake at 250 deg C for about 15 minutes or until golden brown.
  • Garnish with any salad that you prefer, and serve.
