Ande ki Bhurji is scrambled eggs made the Indian way. It is a quick and easy recipe and can be made in under 15 minutes.

Ingredients needed to make Ande Ki Bhurji
- 6 Eggs
- 1 tbsp Oil
- 1 tsp Cumin seeds
- 2-3 Green Chilies; Chopped
- 1 Big Onion; Chopped
- 1 Medium-sized Tomato; Chopped
- 2 tbsp Fresh Coriander Leaves
- 1 tsp Salt
Heat Oil in a pan. Add cumin seeds. When they crackle, add chopped green chillies and onions.
On medium heat, fry the onions till they turn translucent.
Add tomatoes and fresh coriander leaves.
Add salt. Cover and cook on low heat till the tomatoes turn mushy.
Add the eggs.
On medium heat, continuously mix with a spatula and cook till the eggs are fully done.
Remove. Garnish with some more fresh coriander leaves and serve.
