Ingredients
  

Ingredients needed to make Ande Ki Bhurji

  • 6 Eggs
  • 1 tbsp Oil
  • 1 tsp Cumin seeds
  • 2-3 Green Chilies; Chopped
  • 1 Big Onion; Chopped
  • 1 Medium-sized Tomato; Chopped
  • 2 tbsp Fresh Coriander Leaves
  • 1 tsp Salt

Instructions
 

  • Heat Oil in a pan. Add cumin seeds. When they crackle, add chopped green chillies and onions.
  • On medium heat, fry the onions till they turn translucent.
  • Add tomatoes and fresh coriander leaves.
  • Add salt. Cover and cook on low heat till the tomatoes turn mushy.
  • Add the eggs.
  • On medium heat, continuously mix with a spatula and cook till the eggs are fully done.
  • Remove. Garnish with some more fresh coriander leaves and serve.
