Marinade
- 1 Kg Chicken Wings
- 1½ tsp Salt
- ½ tsp Onion Powder
- ½ tsp Black Pepper Powder
- ½ tsp White Pepper Powder
- ½ tsp Paprika Powder
- ½ tsp Cayenne Pepper Powder
- ½ tsp Baking Soda
Coating Sauce
- 1 tbsp Butter
- 1 tbsp Lemon Juice
- 1 tbsp Chives
- 1 tbsp Honey
- 1 tbsp Green Chilli Sauce
- 1 pinch Lemon Zest
Preparing the Marinade
Wash and pat dry the chicken wings.
Transfer them to a mixing bowl.
Add salt, black pepper powder, white pepper powder, onion powder, paprika powder, cayenne pepper powder and baking soda.
Mix well so that all the wings are nicely coated with the spices.
Cover and let it rest in the fridge for at least an hour. If you can leave it for 4-5 hours, that's even better.
Preparing the coating sauce
In a pan, heat butter, honey and green chilli sauce on medium heat.
When the butter melts, add chives. Fry for a few seconds.
Turn off the heat, and when it cools, add lemon juice and lemon zest.
Keep this sauce aside.
At the time of serving
Transfer the marinated chicken wings to the air fryer basket.
Air fry them for 20 minutes at 200 degrees C (After 10 minutes, toss them once and then, continue air frying for another 10 minutes).
Once the chicken wings are done, transfer them to a mixing bowl.
Add the coating sauce and toss it so that the sauce coats all the wings.
Transfer to a serving plate. Garnish with finely chopped coriander leaves and serve.
