Zucchini Halwa

A delicious Indian dessert made with zucchini, milk and fried nuts. It takes inspiration from Ghiye ka Halwa, which is made with fresh, tender bottle gourd.

- 3 Medium Sized Zucchinis; washed and grated
- 1 lt Full Fat Milk
- ½ tsp Cardamom Powder
- 2 Pinches Dried Saffron Strands
- 250 ml Sweetened Condensed Milk
- 100 gm Refined Sugar
- 1 Handful Mixed Nuts ( Cashews, almonds, pistachios)
- 5 tbsp Ghee
Heat milk in a thick-bottomed saucepan.
Add cardamom powder and saffron.
Add grated zucchini.
Now, cook on medium heat. Mix from time to time so that the milk doesn't stick to the base of the pan.
Cook till the milk reduces to half.
Add condensed milk and sugar.
Cook till it reduces to half. Then, turn off the heat.
Fry nuts in ghee.
Add them to the cooked halwa and serve.
