Moth Bean Sprouts Sandwich

Protein-rich, delicious open sandwiches made with Moth Bean Sprouts, feta cheese and a few basic ingredients- A healthy and delicious breakfast/evening snack.

Equipment

  • Pan for cooking the sprouts
  • Mixing bowl
  • Pan for toasting bread
  • Spatula
  • Knives and Cutting Board

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Medium-Sized Capsicum; chopped
  • 3 Handfuls Moth Bean Sprouts
  • ½ tsp Salt
  • ½ tsp Black Pepper Powder
  • 1 Medium-Sized Tomato; chopped
  • 200 gm Feta Cheese
  • 1 Handful Coriander and Mint Leaves; finely chopped
  • Bread Slices
  • Extra oil; to brush on the bread slices

Instructions
 

  • Heat oil in a pan.
  • Add chopped capsicum. Fry on medium heat for about 30 seconds.
  • Add moth bean sprouts, salt and black pepper. Lower the heat and cook for 10-12 minutes. Mix in between.
  • Check if the sprouts are cooked by pressing them between your fingers.
  • Turn off the heat. Transfer them to a mixing bowl.
  • Add chopped tomatoes, chopped coriander and mint leaves, and crumbled feta cheese. Add a tablespoon of extra virgin olive oil.
  • Mix.
  • Toast the bread slices with a little bit of oil.
  • Spread a generous amount of the mixture on each slice and serve.
