Moth Bean Sprouts Sandwich

Protein-rich, delicious open sandwiches made with Moth Bean Sprouts, feta cheese and a few basic ingredients- A healthy and delicious breakfast/evening snack.

- 1 tbsp Olive Oil
- 1 Medium-Sized Capsicum; chopped
- 3 Handfuls Moth Bean Sprouts
- ½ tsp Salt
- ½ tsp Black Pepper Powder
- 1 Medium-Sized Tomato; chopped
- 200 gm Feta Cheese
- 1 Handful Coriander and Mint Leaves; finely chopped
- Bread Slices
- Extra oil; to brush on the bread slices
Heat oil in a pan.
Add chopped capsicum. Fry on medium heat for about 30 seconds.
Add moth bean sprouts, salt and black pepper. Lower the heat and cook for 10-12 minutes. Mix in between.
Check if the sprouts are cooked by pressing them between your fingers.
Turn off the heat. Transfer them to a mixing bowl.
Add chopped tomatoes, chopped coriander and mint leaves, and crumbled feta cheese. Add a tablespoon of extra virgin olive oil.
Mix.
Toast the bread slices with a little bit of oil.
Spread a generous amount of the mixture on each slice and serve.
