Open Sandwich with Moth Bean Sprouts
Recently, I shared an easy 3-step method of making Moth Bean Sprouts at home. In my article, I have shared detailed info starting from what sprouts are to making them at home, along with the various recipes you can try with moth bean sprouts.

Sprouts are a great addition to your everyday meals. Bean sprouts are commonly known to be rich in protein, fibre, and antioxidants. These nutrient-dense legumes are low in GI; therefore, they don’t spike your blood sugar level. They are also known to be great for the heart and building immunity.
There are a variety of recipes in which you can use sprouts. Today, I am sharing a quick and easy open sandwich recipe, which can be made with Moth Bean sprouts.


If you have a batch of sprouts ready, you can make sprouts chaat (by combining them with tamarind chutney, mint chutney, bhujiya sev, etc.), sprouts salad ( by combining them with carrots, cucumber, corn, etc.), sprouts sundal ( by stir-frying cooked sprouts), gravy, etc.


Now, let’s start with the recipe for a quick and easy Open Sandwich with Moth Bean Sprouts. For this recipe, I have used sourdough bread, which is easily available at local bakeries in Germany. However, you can make these sandwiches with any bread of your choice.

Equipment Needed:
Ingredients for Open Sandwich with Moth Bean Sprouts:
- 1 tbsp Olive Oil
- 1 Medium-Sized Capsicum; chopped
- 3 Handfuls Moth Bean Sprouts
- ½ tsp Salt
- ½ tsp Black Pepper Powder
- 1 Medium-Sized Tomato; chopped
- 200 gm Feta Cheese
- 1 Handful Coriander and Mint Leaves; finely chopped
- Bread Slices
- Extra oil; to brush on the bread slices and about a tablespoon for the filling.
Method to make Open Sandwich with Moth Bean Sprouts:
Heat oil in a pan.
Add chopped capsicum. Fry on medium heat for about 30 seconds.
Add moth bean sprouts, salt and black pepper. Lower the heat and cook for 10-12 minutes. Mix in between.

Check if the sprouts are cooked by pressing them between your fingers. Turn off the heat. Transfer them to a mixing bowl.
Add chopped tomatoes, chopped mint and coriander leaves and crumbled feta cheese. Also, add a tablespoon of extra virgin olive oil.
Mix.
Toast the bread slices with a little bit of oil.
Spread a generous amount of the mixture on each slice and serve.

Equipment
- Pan for cooking the sprouts
- Mixing bowl
- Pan for toasting bread
- Spatula
- Knives and Cutting Board
Ingredients

Instructions
