Potato & Quark Tikki with Grüne Soße and Salad

This is an Indo-German fusion dish in which potato and quark cutlets are served with a herbed dip and salad.

Ingredients for Potato and Quark Tikki
- 7 Medium-Sized Potatoes
- 100 gm Quark
- 2 tsp Salt
- 1 tsp Red Chilli Flakes
- 1 tbsp Crushed Dry Mint Leaves/Finely Chopped Fresh Mint Leaves
- 1 tsp Lemon Juice
- 2 Slices Sandwich Bread, crumbled
- Oil; to fry
In addition
- 400 gm Grüne Soße
- Salad Veggies
- 4 Boiled Eggs
- 1 Lemon
Method to Make Potato and Quark Tikkis
Boil the potatoes. Peel them and let them cool completely.
Grate the potatoes.
Add salt, red chilli flakes, crushed/finely chopped Mint Leaves and Lemon Juice. Mix.
Add bread crumbs.
Knead together.
Crumble the quark.
Wet your left hand. Take a small portion of the potato mixture and flatten it.
Put a spoonful of crumbled quark.
Cover with the potato mixture. Give it a round shape.
If while shaping, the quark comes out, cover it with some potato mixture.
This way, make all the tikkis. Keep them uncovered in the refrigerator or about 15 minutes.
Heat oil in a pan. Then the oil becomes hot, put the tikkis. Let them fry for 2-3 minutes, or till you see a brown layer getting formed.
Then turn the tikkis. Fry till the other side also turns brown.
