Recipe for Potato & Quark Tikki with Grüne Soße and Salad
Today’s recipe is an Indo-German fusion recipe. It has elements from both cuisines. Let me start with the German components first.
Grüne Soße translates to Green sauce. It is basically a yoghurt and cream-based dip made by combining yoghurt and cream with seven seasonal herbs. Grüne Soße starts showing up in supermarkets in Germany around spring. It is usually served with boiled eggs and potatoes.
Quark is another German ingredient which is very popular. It is similar to hung curd and is used in many German recipes like cheesecakes, pancakes etc. In my recipe, however, I have used Russian quark, which is also easily available in German Supermarkets. Russian quark has form and can be crumbled.
I would also like to make a mention of the salad. In spring, many different salad vegetables are harvested in Europe. The one I like the most is wildkräuter Salat. It is a combination of different salads like Arugula, Chard, Beet Leaves etc. The combination tastes yummy!
Now coming to the Indian component of the recipe- Aalu Tikki. Aalu Tikki is a cutlet made with potatoes. In India, Tikki is normally eaten with Tamarind or Mint Chutney. It is also made into Chaat and eaten with yoghurt, chutneys and chickpeas. In my recipe, the Aalu Tikki is mildly spiced so that the taste of the Grüne Soße is not suppressed.
So, let us start with the recipe:
Ingredients for Potato and Quark Tikki:
- 7 Medium-Sized Potatoes ( For my readers in Germany: Use vorwiegend festkochende Kartoffeln)
- 100 gm Quark (For my readers in Germany: Use Quark by the brand name Qwarki)
- Salt; to taste
- 1 tsp Red Chilli Flakes
- 1 tbsp Crushed Dry Mint Leaves/Finely Chopped Fresh Mint Leaves
- 1 tsp Lemon Juice
- 2 Slices Sandwich Bread, crumbled
- Oil; to fry the Tikkis
In addition, you need:
- 400 gm Grüne Soße
- Salad Veggies
- 4 Boiled Eggs
- 1 Lemon
Method to Make Potato and Quark Tikkis:
- Boil the potatoes. Peel them and let them cool completely.
- Grate the potatoes.
- Add salt, red chilli flakes, crushed/finely chopped Mint Leaves, bread crumbs and Lemon Juice. Mix.
- Knead together.
- Crumble the quark.
- Wet your left hand. Take a small portion of the potato mixture and flatten it.
- Put a spoonful of crumbled quark.
- Cover with the potato mixture. Give it a round shape.
- If the quark comes out while shaping, cover it with some potato mixture.
- This way, make all the tikkis. Keep them uncovered in the refrigerator for about 15 minutes.
- Heat oil in a pan. Then the oil becomes hot, put the tikkis. Let them fry for 2-3 minutes or until you see a brown layer forming at the base of the tikkis.
- Then turn the tikkis. Fry till the other side also turns brown.
Other Preparation
- Boil Eggs and keep them ready.
- Wash the salad veggies and keep them ready.
Plating
- Take a serving plate. Place the tikkis. Put the Grüne Soße in a small serving bowl. Place the eggs. Serve with salad and a lemon wedge.
- For Vegetarians, you can serve without eggs.
