Recipe for Aalu Fry

This a quick and easy side dish recipe in which potatoes are combined with spices and fried on a pan till they become crispy. It goes best with rice, dal and ghee.

Ingredients
  

  • 8-10 Medium-sized Potatoes
  • 2 tbsp Sesame Oil
  • ¾ tsp Turmeric Powder
  • 1 tsp Kashmiri Red Chilli Powder
  • 1 tbsp Coriander Powder
  • Salt; to taste
  • 8-10 Curry Leaves

Instructions
 

  • Peel the potatoes and chop them into small pieces.
  • Heat oil in a pan.
  • Add the potatoes. Add turmeric powder Mix well. Cover with a lid and, on medium heat, cook them.
  • Now add red chilli powder, coriander powder and salt. Increase the heat. Mix them constantly ( to ensure they don't burn) and cook till they become crispy.
  • Add fresh curry leaves. Mix once more and serve.
