Recipe for Aalu Fry

This a quick and easy side dish recipe in which potatoes are combined with spices and fried on a pan till they become crispy. It goes best with rice, dal and ghee.

- 8-10 Medium-sized Potatoes
- 2 tbsp Sesame Oil
- ¾ tsp Turmeric Powder
- 1 tsp Kashmiri Red Chilli Powder
- 1 tbsp Coriander Powder
- Salt; to taste
- 8-10 Curry Leaves
Peel the potatoes and chop them into small pieces.
Heat oil in a pan.
Add the potatoes. Add turmeric powder Mix well. Cover with a lid and, on medium heat, cook them.
Now add red chilli powder, coriander powder and salt. Increase the heat. Mix them constantly ( to ensure they don't burn) and cook till they become crispy.
Add fresh curry leaves. Mix once more and serve.
