Recipe for Aalu Fry
Potato is a very versatile vegetable. In India, potatoes are combined with peas, capsicum, etc., and various dishes are made. The recipe I am sharing today is the one I often use at my home. When there is dal and rice on the menu, usually, there is a side dish of any vegetable. Aalu fry (Potato fry) is one of the most favourite side dishes in my home. In this recipe, potatoes are fried till they become crispy. This dish is easy to make and is undoubtedly delicious.
So, let us start with the recipe.
Ingredients needed to make Aalu Fry:
- 8-10 Medium-sized Potatoes
- 2 tbsp Sesame Oil
- ¾ tsp Turmeric Powder
- 1 tsp Kashmiri Red Chilli Powder
- 1 tbsp Coriander Powder
- Salt; to taste
- 8-10 Curry Leaves
Method to make Aalu Fry:
- Peel the potatoes and chop them into small pieces. Pat dry in case there is extra moisture.
- Heat oil in a pan.
- Add the potatoes. Add turmeric powder and mix well. Cover with a lid and, on medium heat, cook them.
- Now add red chilli powder, coriander powder and salt. Increase the heat. Mix them constantly ( to ensure they don’t burn) and cook till they become crispy.
- Add fresh curry leaves.
- Mix once more and serve.
Recently when I made Aalu fry, I paired it with rice and Kohlrabi Dal. It was a lovely combination.
