Recipe for Brinjal Fry

This is a quick and easy recipe in which brinjal is fried with onions and a few Indian spices. It goes well with plain paranthas, rotis or dal and rice.

Ingredients
  

  • 300 gm Brinjals
  • 2 tbsp Groundnut Oil
  • 2 Medium-sized onions; thinly sliced
  • 1 tsp Cumin Seeds
  • Salt; to taste
  • 1 tbsp Coriander Powder
  • ¾ tsp Turmeric Powder
  • 1 tsp Garam Masala
  • Fresh Coriander Leaves, to garnish

Instructions
 

  • Heat one tablespoon of oil in a pan. Add cumin seeds. Add sliced onions.
  • On medium heat, fry the onions till they turn translucent.
  • Cut Brinjals into cubes and add them to the pan.
  • Add salt, coriander powder and turmeric powder. Reduce the heat, cover and cook till the brinjals turn soft.
  • Now add garam masala and one tablespoon of oil.
  • Cook on high heat for a minute or two.
  • Garnish with fresh coriander leaves and serve.
