Recipe for Brinjal Fry

This is a quick and easy recipe in which brinjal is fried with onions and a few Indian spices. It goes well with plain paranthas, rotis or dal and rice.

- 300 gm Brinjals
- 2 tbsp Groundnut Oil
- 2 Medium-sized onions; thinly sliced
- 1 tsp Cumin Seeds
- Salt; to taste
- 1 tbsp Coriander Powder
- ¾ tsp Turmeric Powder
- 1 tsp Garam Masala
- Fresh Coriander Leaves, to garnish
Heat one tablespoon of oil in a pan. Add cumin seeds. Add sliced onions.
On medium heat, fry the onions till they turn translucent.
Cut Brinjals into cubes and add them to the pan.
Add salt, coriander powder and turmeric powder. Reduce the heat, cover and cook till the brinjals turn soft.
Now add garam masala and one tablespoon of oil.
Cook on high heat for a minute or two.
Garnish with fresh coriander leaves and serve.
