Recipe for Brinjal Fry
Recently on a visit to a Turkish store near me, I was lucky to find fresh brinjals. So, I decided to make stir-fried brinjal. This is a simple, quick and easy recipe. Brinjal prepared this way goes well with paranthas/ rotis and Rice and Dal.
Let’s start with the recipe:
Ingredients needed to make Brinjal Fry:
- 300 gm Brinjals
- 2 tbsp Groundnut Oil
- 2 Medium-sized onions; thinly sliced
- 1 tsp Cumin Seeds
- Salt; to taste
- 1 tbsp Coriander Powder
- ¾ tsp Turmeric Powder
- 1 tsp Garam Masala
- Fresh Coriander Leaves to garnish
A note for my readers in Germany: Brinjal can be purchased from German supermarkets/Turkish shops, or Indian shops. The rest of the ingredients needed for this recipe can be purchased from Spiceland, Frankfurt. Their quality is good, prices reasonable and they deliver all across Germany.
Method to make Brinjal Fry:
- Heat one tablespoon of oil in a pan. Add cumin seeds. Add sliced onions.
- On medium heat, fry the onions till they turn translucent.
- Cut Brinjals into cubes and add them to the pan.
- Add salt, coriander powder and turmeric powder. Mix.
- Reduce the heat, cover and cook till the brinjals turn soft. Now add garam masala and one tablespoon of oil.
- Cook on high heat for a minute or two.
- Garnish with fresh coriander leaves and serve.
