Recipe for Dill Pesto

A delicious pesto made with fresh dill leaves, garlic and nuts blended together with olive oil. It can be used as a spread or as a sauce for pasta

Equipment

  • Food Processor/Blender
  • Pan
  • Grater

Ingredients
  

  • 2 Handfuls Dill Leaves
  • 8-10 Walnuts
  • 8-10 Almonds
  • 2 tbsp Sunflower Seeds
  • Lemon Zest from 1 Lemon
  • 8-10 tbsp Olive Oil
  • 2-3 Garlic Cloves
  • Salt; to taste

Instructions
 

  • On medium heat, toast all the nuts and seeds in a pan. When well toasted, remove and let the seeds cool.
  • Use a food processor or mixie jar to finely crush the nuts and seeds.
  • Add garlic, dill leaves, lemon zest and salt.
  • Add olive oil, spoon by spoon and blend it into the paste.
  • Dill Pesto is ready.
