Chicken and Cheese Sandwich

Sandwiches are easy to eat and carry, so they are one of my most preferred foods when packing lunch for my family.

Today’s recipe is a Chicken and Cheese Sandwich. I commonly use it to prepare packed lunches for my children. If you do some prep the previous day, these can be made in no time the following morning. They taste good even after they become cold and are easy to handle. And, of course, they are healthy, with a good balance of carbs, protein and fat.

You can prep it beforehand and let the chicken mixture stay in the fridge. In the morning, when you want to pack the lunchbox, take a portion of the prepared mixture, shape it into a patty, and fry it (I usually shallow fry each patty with less than a teaspoon of oil). Then, place it between slices of bread, add a cheese slice, and grill it. In less than 15 minutes, the lunchbox is ready.

When you add cheese slices along with the patty between the bread slices and grill it in a sandwich maker, the cheese will melt and bind all the sandwich components, making it easier to handle. The cheese that I prefer is medium-aged gouda. It adds another dimension to the taste and makes the sandwich super delicious.

Alternatively, skip the grilling part. Place the fried patty between slices of bread, add a cheese slice, and a fresh salad (like lettuce, thinly sliced cucumber, etc). Use cling foil to wrap the sandwich tightly to keep all the components together.

Now, let’s start with the recipe for Chicken and Cheese Sandwich:

Equipment Needed:

  • Mixing bowl
  • Pan
  • Sandwich Maker
  • Food Processor
  • Knives and Chopping board
  • Spatula

Ingredients for Chicken and Cheese Sandwich:

  • 600 gm Chicken Breast, minced
  • 1 Cup Finely Chopped veggies (Cabbage, Capsicum, Beans, onion, etc)
  • 3-4 Green Chillies, Finely Chopped
  • 1½ tsp Dried Italian Herbs (which includes parsley, garlic, onions, basil, oregano, tarragon, marjoram, thyme, etc.)
  • 1½ tsp Salt
  • 3-4 tbsp Finely Chopped Fresh Coriander Leaves
  • ½ Cup Grated Cheese
  • 4 tbsp Puffed Amaranth
  • Oil for frying the patties
  • 12 Slices Bread

Method to make Chicken and Cheese Sandwich:

  • In a mixing bowl, combine minced chicken, veggies, green chillies, coriander, salt, Italian herbs mix and puffed amaranth.


  • Mix well.


  • Divide the mixture into 8 portions. Take a portion of this mixture and flatten it. Stuff it with grated cheese. Then close it. Give it a shape of your preference.


  • Shallow fry on medium-hot oil.


  • Place this patty between slices of bread. Add cheese slices and grill.


  • Let the sandwich cool before packing it in the lunchbox.

Some Notes about Ingredient Sourcing in Germany:

  • Chicken Breast: Called Hähnchenbrustfilet in German. Available in the refrigerator section of supermarkets.
    Chicken breast is lean meat. It cooks fast and is ideal for quick recipes.
  • Veggies (Cabbage, Capsicum, Beans, onion, etc): All are available in supermarkets.
    Ensure that they are all finely chopped. I use a food processor for fine chopping.
  • Green Chillies: Available in Indian shops.
    Skip if you don’t like spicy food.
  •  Italian herbs mix: I use the one from Ostmann. It is called italienische Kräuter. It is easily available in supermarkets.
  • Salt: Use regular table salt. Read my article about Salt varieties in German supermarkets.
  • Fresh Coriander Leaves: Available in Indian shops. You can even replace them with parsley.
  • Grated Cheese: I used grated gouda cheese. It is available in supermarkets.
  • Puffed Amaranth: It is called gepuffter Amaranth. It is available in shops like DM, Alnatura etc.
  • Oil: Refined sunflower oil works for this recipe. Read my article about oil varieties in German Supermarkets.
  • Bread: Use any freshly baked bread of your choice.
