Recipe for Whole Spelt Flour Dinner Rolls (Dinkelmehlbrötchen)
Today´s recipe is Whole Spelt Flour Dinner Rolls. As the name reveals, this bread is made with whole-grain spelt flour. The flour is combined with salt, milk, yoghurt, and butter. Both yeast and baking powder are used as leavening agents. In my recipe, I also added a handful of flaxseeds to the dough and topped the dinner rolls with chia seeds. This part is totally optional. You can either skip them or play around with other ingredients, such as sesame seeds, pumpkin seeds, sunflower seeds, etc, to make your own version of these delicious dinner rolls.


Making bread at home is a truly satisfying experience. After all the effort of kneading, resting, knocking, resting, and baking, when you take out the perfect loaf of bread from the oven, the feeling is joy and elation. The smell of freshly baked bread stays for hours, giving a warm and comfortable feeling of being at home.

Today’s recipe is for Whole Spelt Flour Dinner Rolls. These slightly crusty bread rolls, which are soft inside, are perfect for sandwiches and burgers.

Equipment Needed:
Ingredients for Whole Spelt Flour Dinner Rolls:
- 500 gm Whole Spelt Flour
- 7 gm Instant Dry Yeast
- 5 gm Baking Powder
- 1 tsp Salt
- 125 ml Milk with 3.5% Fat (at room temperature)
- 25 gm Soft Butter
- 150 ml Yoghurt with 3.5% Fat ( (at room temperature)
- 25 ml Water (at room temperature)
- 1 Handful of Flaxseeds (optional)
- Extra Butter to brush on the buns (optional)
- Chia seeds or any seed of your choice to sprinkle on the buns
Method to make Whole Spelt Flour Dinner Rolls:
Combine flour, salt, yeast, and baking powder in a mixing bowl.

Add flaxseeds, milk and yoghurt and mix well.

Add water and knead it into a smooth, pliable dough. Add butter. Stretch and knead for 10 minutes.

Now, round the dough. Cover and rest it in a warm place until it doubles in volume. Depending on the temperature, this can take about an hour or more.

Once the dough has doubled, divide it into eight equal portions.

Knead them individually and round them.

Place them on a baking sheet. Brush water on the surface and sprinkle some chia seeds. The seeds will stick to the dough. Cover and rest them for about 30 minutes.

After 30 minutes, the dough will rise again.

Cut in the middle with a sharp knife or blade.

Preheat the oven to 200 degrees C for 10 minutes. Transfer the baking tray to the oven and bake the bread rolls for 30 minutes at 200 degrees C. Then, remove them and let them cool.

Once cooled, use them as desired.

Some Notes about Ingredient Sourcing in Germany:

- Instant Dry Yeast: This is called Trockene Hefe. It is available in 7gm sachets.
- Baking Powder: This is called Backpulver in German. It is commonly available in 15gm sachets.

- Once the dough has doubled, divide it into eight equal portions.
- Knead them individually and round them.
- Place them on a baking sheet. Cover and rest them for about 30 minutes.
- Preheat the oven to 200 degrees C for 10 minutes.
- Make a cut on a dough with a sharp knife or blade.
- Transfer the baking tray to the oven and bake the bread rolls for 30 minutes at 200 degrees C.
- Then, remove them and let them cool.
