Raddish/Cucumber & Peanut Salad

Raddish/Cucumber & Peanut Salad is a salad recipe in which radish/cucumber is grated/finely chopped and combined with a few other ingredients to make a delicious salad. This salad can be eaten as is or as an accompaniment to Dal Chawal ( Rice with lentils) or any other gravy and roti

I recently made cucumber peanut salad and served it with Kala Chana Gravy and steamed rice. It tasted delicious!

Here is the recipe:

Equipment Needed:

Ingredients for Raddish/Cucumber & Peanut Salad:

1. Radish ( grated): About 10-12 ( I have used the ones with the pink skin) Or 1 Big Cucumber (Chopped)

2. Roasted Peanut powder ( coarsely ground): 4 tbsp

peanutsRoasted Peanuts

3. Roasted Sesame Powder: 1 tablespoon

4. Green chilis ( finely chopped): 2

5. Salt: About 1/2 tsp

6. Fresh coriander ( finely chopped) :3-4 strands

7. 1/2 Lemon (Juice Extracted)-Optional

Recipe for Raddish/Cucumber & Peanut Salad:

  1. Add all the ingredients to the salad bowl.

    Moola Ka Salad
  2. Mix well.

    Mooli Ka Salad

Easy to make, simple yet delicious Salad is ready!

Some additional notes:

  1. I have used pink radishes for this recipe. You can use any radish that is locally available. You can combine radish and cucumber OR add thinly sliced onions.
  2. You can temper this salad by heating one tablespoon of oil in a small pan, frying cumin seeds, curry leaves and chopped green chillies, and then adding this to the prepared salad. It enhances the taste.
  3. You can make peanut and sesame powder in larger quantities and store them in an airtight container. That way, you can use them in various recipes. It stays good for three months.
  4. Always roast peanuts and sesame seeds on low to medium heat and by constantly mixing so they don’t burn.
  5. If you find roasting peanuts and sesame tedious, buy roasted peanuts and sesame seeds from the shop and coarsely grind them at home.

  • 10-12 Small Pink Radishes OR 1 Cucumber
  • 4 tbsp Roasted Peanut Powder
  • 1 tbsp Roasted Sesame Powder
  • 2 Finely Chopped Green Chilies
  • 3-4 Strands Fresh Coriander Leaves
  • 1/2 tsp Salt
  • ½ Lemon (Juice Extracted)-Optional

Instructions
 

  • Add all the ingredients to the salad bowl.
  • Mix well and serve
