Bread Rolls made from Oats, Millet, Quark and Flax Seeds

Today’s recipe: Bread Rolls made from Oats, Millet, Quark and Flax Seeds, is a quick and easy bread recipe that doesn’t require much kneading or any resting. This bread is high in protein and fibre, gluten-free, and full of flavour.

As the name reveals, the primary ingredients in this bread are oats, millet, flax seeds and quark.

Let me take you through these ingredients first and also share some information about sourcing them in Germany:

Rolled Oats:

Rolled Oats, called Hafer Flocken in German, are low in calories and fat and high in fibre and protein. They are also gluten-free and a great addition to your diet from a weight management perspective. I used this product, which I bought from a regular supermarket.

Golden Millet:

The next ingredient I have used in this recipe is Golden Millet, called Goldhirse in German. It is not available in all supermarkets, but not at all difficult to find. It is commonly available in Alnatura, Rewe and DM. These are also low in fat and sugar and high in protein, carbs and fibre. Naturally gluten-free, golden millets are also a great addition to our everyday meals.

Flax Seeds

Flaxseeds are called Leinsamen in German. They are a great source of Omega-3 fats and are rich in fibre. They help with digestion and are gut-friendly. They must, therefore, be included in our everyday meals.

Quark

Quark is a milk product commonly available in Germany. It is low in calories and contains lots of healthy proteins and calcium, which are great for bone strength. Quark contains an average of 12 grams of protein per 100-gram serving, regardless of the fat content. I used a low-fat quark called Magerquark in my recipe. You can use any quark of your choice.

Other Ingredients:

In addition, I used baking Powder called Backpulver. It comes in 15gm sachets, and I used one sachet for this recipe. Salt is called Salz in German. Read my article about salt to learn more. I also used sesame seeds and chia seeds, which are called Sesamsamen and Chiasamen, respectively. You can use these seeds, sunflower seeds, poppy seeds, and pumpkin seeds. They are all easily available in German supermarkets.

Bread Rolls made from Oats, Millet, Quark, and Flax Seeds are very nutritious. When paired with butter, eggs, chicken, etc., they make a power-packed breakfast. Recently, when I made these bread rolls, I made mini chicken sandwiches and they tasted yum!

This is an instant bread recipe, so it doesn’t require resting. As soon as you prepare the dough, shape it and chuck it in the oven. In 30 minutes, these bread rolls are ready! It is a super easy recipe and can be easily made by beginners.

They have a lovely brown crust and are soft from the inside.

Now, let’s start with the recipe:

Equipment Needed:

Ingredients for 16 Bread Rolls:

  • 200 gm Golden Millet; washed and soaked in water for 2 hours
  • 200 gm Rolled Oats
  • 50 gm Flax Seeds
  • 500 gm Low Fat Quark
  • 10 gm Salt
  • 15 gm Baking Powder
  • 100 ml Water
  • Any seeds of your choice (sesame seeds/pumpkin seeds/sunflower seeds/poppy seeds/etc)

Method to make Bread Rolls: 

  • Drain out all the water from the millet. Spread it on a cotton cloth and let it dry for about an hour.


  • After an hour, turn on the oven and preheat it to 220 degrees C for 10 minutes.
  • While the oven preheats, grind the millet grains to a powder. Transfer them to a mixing bowl.


  • Also, powder the rolled oats in a mixer and add this to the millet powder. Similarly, powder the flax seeds in a mixer and add their powder to the millet and oats powder.


  • To this, add salt and baking powder.


  • Mix everything.


  • Then, add quark and water.


  • Knead it to a smooth dough.


  • Wet your hands and divide into 16 portions. Round and flatten them like a cutlet.


  • Coat them with any seed. I used sesame seeds and chia seeds. Place them on a greased and dusted baking tray, or place a baking sheet on the baking tray and place the rolls on the baking sheet.


  • Bake them at 220 degrees C for 30 minutes. After 30 minutes, remove them from the oven and let them cool on a wire rack.


  • Then, wrap them and store them in a bread box.

Delicious, nutritious, and easy-to-make bread rolls are ready! My family and I enjoyed these with butter and omelette.
