Eggs and Veg Open-Faced Sandwich with Capsicum Relish
Today’s recipe is a quick and easy open-faced sandwich recipe, which can be made in under 15 minutes. It is healthy and delicious and is perfect for a day when you don’t have much time to cook but want to feed yourself something healthy, tasty and filling. Equipment Needed:
All you need to make these sandwiches is a saucepan to scramble the eggs, make the capsicum relish and an oven to toast the bread. In addition, you need knives, spoons etc.

- Baguette: Easily available in supermarkets. I buy the fresh ones from the bakery section.
- Fresh Cream/Mayonnaise: Called Frischkäse and Mayonnaise, respectively. Both are available in all supermarkets. Read my article about fresh creams to know more.
- Capsicum: Easily available in supermarkets. I used the red ones.
- Honey and Dijon Mustard: Also easily available in supermarkets. I use Maille Dijon Mustard and Forest Honey.
- Eggs: Easily available in all supermarkets. You can read my article about Eggs to choose the right eggs.
- Olives: Available in jars in all supermarkets and Turkish stores.
- Salt: Also available in all supermarkets. Read my article about salt.
- Pepper: Pepper powder is available easily. You also get black peppercorns in supermarkets, which you can crush and use.

Ingredients for Capsicum Relish
- 2 Medium-Sized Capsicums
- 1½ tsp Honey
- 1 tbsp Dijon Mustard
- 1 tbsp Butter
- ⅓ tsp Salt
- ¼ tsp Black Pepper Powder
Other Ingredients
- Baguette
- Butter
- Fresh Cream/Mayonnaise
- Thinly sliced Cucumber
- Scrambled Eggs
- Olives
Method to make Eggs and Veg Open-Faced Sandwich with Capsicum Relish
Method to make Capsicum Relish
- Heat butter in a pan. Add thinly sliced capsicums. Add salt and pepper and cook them till they turn soft.


- Turn off the heat. Add honey and mustard. Mix well.

Rest of the steps:
- Apply butter on the baguette and bake it in a preheated oven at 200 deg for 5 minutes.
- On the baked bread, spread fresh cream.
- Place slices of cucumber, followed by capsicum relish.

- Top it with scrambled eggs and olives. Sprinkle some fresh herbs for garnishing.
