Breakfast Bread with Quark and Chia Seeds
Today’s recipe, Breakfast Bread with Quark and Chia Seeds, is for easy bread made with refined flour, quark, and chia seeds. This flavourful and delicious bread can be used for sandwiches, toast, etc.


Refined flour gives you a light bread, quark added loads of flavour and also increases the protein content and chia seeds increase the fiber content of the bread.

Now, let’s start with the recipe for Breakfast Bread with Quark and Chia Seeds.
Equipment Needed:
Ingredients for Breakfast Bread with Quark and Chia Seeds:
- 500 gm Refined Flour
- 10 gm Sugar
- 7 gm Instant Dry Yeast
- 5 gm Salt
- 250 gm Low Fat Quark
- 2 tbsp Olive Oil
- 4 tbsp Chia Seeds
- Lukewarm Water for kneading a smooth dough
Method to make Breakfast Bread with Quark and Chia Seeds:
- In a small bowl, mix sugar, 100ml water, and yeast. Let it rest for 2-3 minutes or until the yeast bubbles.

- In a big mixing bowl, combine flour and salt.

- Add the yeast and sugar mix.

- Add quark and chia seeds.


- Add water. Stretch and knead the dough for 10 minutes.

- Add oil and knead it again for another 5 minutes.

- Cover and rest the dough until it doubles in size. This should typically happen in an hour at room temperature of about 25 degrees C.

- Knock the dough and knead it for a minute.

- Transfer the dough to a greased and dusted baking mould.

- Sprinkle some more chia seeds on top and press them so they stick to the dough.

- Cover and rest it for about 30 minutes. After 30 minutes, the dough will rise again. Give it diagonal cuts with a knife.

- Preheat the oven to 200 degrees C for 10 minutes.
- Transfer the mould to the oven and bake at 200 degrees C for about 45 minutes. Remove the bread and let it cool on a wire rack.

- Once it cools, slice it.

Some Notes about Ingredient Sourcing in Germany:
- Refined Flour: Use Weizenmehl 550 for this recipe. Read more about Flour in German Supermarkets here.

- Sugar: I used Rübenzucker. You can use any type of sugar. Read more about sugar in German Supermarkets here.

- Instant Dry Yeast: Yeast is called Hefe in German. This comes in small sachets of 7gm each. It looks like this.

- Low-fat Quark: Quark is commonly available in supermarkets’ refrigerator sections. The low-fat version looks like this.

- Olive Oil: Read more about oil in German Supermarkets here.
- Chia Seeds: Chia Seeds are called Chia Samen in German. They are easily available in supermarkets.
