Pasta Salad

Pasta Salad

Pasta Salad is a quick and easy-to-make dish. It is an ideal dish to carry for a potluck, picnic, sports event or serve as an additional dish for your barbeque party. It takes hardly any time to prepare pasta salad, and it can even be prepared by beginners.

I made this delicious salad some days back and served it at a barbeque party I hosted for our friends. It had a nice, fresh touch and was a great combination with heavy barbecued meats and veggies. I have shown the recipe with the ingredients that were readily available to me. However, you can get creative and add more ingredients to suit your taste. I have shared a few suggestions at the end of the recipe.

Let’s check out the recipe for Pasta Salad.

Equipment Needed:

Ingredients for Pasta Salad:

  • 500 gm Raw Pasta
  • 2 Medium-Sized Carrots; cut into cubes
  • 1 Medium-Sized Capsicum; cut into cubes
  • 1 Medium-Sized Cucumber; cut into cubes
  • 8-10 Cherry Tomatoes; Cut into halves
  • 1 Cup Sweet Corn
  • 8-10 Green or Black Olives; cut into halves
  • 2 tbsp Finely Chopped pickled Jalapenos
  • 1 tbsp Lemon Juice
  • 1 tbsp Orange Juice
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Salt
  • ⅔ tsp Crushed/Powdered Black Pepper
  • 1 tbsp Honey
  • 250 gm Mozarella; cut into cubes
  • 1 tbsp Fresh/Dry Chives
  • ⅔ tsp Paprika Powder
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Finely Chopped Fresh Coriander Leaves
  • 8-10 Fresh Basil Leaves

Method to make Pasta Salad:

  • Cook the pasta as per the instructions on the pack. Let it cool down a bit.

  • Once cooled, combine it with all the other listed ingredients.

  • Serve it cold or at room temperature.

Other Ingredient choices:

Pasta: I used Fusilli. Other suitable pasta choices are Penne and Farfalle

Veggies: I used carrots, capsicum, tomatoes and cucumber. Other choices are onions, lettuce, arugula or other fresh salad veggies that are seasonal and available fresh

Canned Ingredients: I used sweet corn, olives, and jalapenos. You can even consider adding canned kidney beans. They taste great, too.

For freshness and some acidity, I added lemon juice, orange juice and balsamic vinegar. You can add all three or choose between them based on your preference.

Cheese: I used mozzarella, but feta also goes well. But remember that Feta has salt, so adjust the salt in your pasta accordingly.

Herbs: I added chives and basil. You can also add fresh coriander, thyme and parsley.

Spices: I added black pepper and paprika powder. You can also use white pepper and some red chilli powder.
