Rock Toast

Today’s recipe is one of my favourite childhood recipes. I remember having learned it from a cooking show on TV, in which a home cook had shown a simple breakfast that could be made using basic ingredients at home. The creator of the recipe called it Rock Toast.

As a child, when I ventured into the kitchen and attempted to make something on my own, this was one of the first recipes I tried. I don’t know why it was named Rock Toast, but I continue to refer to this breakfast with this name.

I have made some slight changes to the recipe, but the baseline recipe remains the same. This is one of the recipes I follow at home when my fridge is practically empty, and I have very few basic ingredients to use.

Here goes this quick, easy, and delicious breakfast recipe that you can try at home.

Equipment Needed:

Ingredients needed to make Rock Toast:

  • 4 Slices American Sandwich Bread
  • 1 Big Onion; finely chopped
  • 1 Big Tomato; finely chopped
  • ½ Cup Finely Chopped Fresh Coriander leaves
  • 1 tsp Red Chilli Flakes
  • 3 tbsp Bread Crumbs
  • 3 tbsp Milk Powder
  • Salt; to taste
  • Cheese Slices (optional)
  • Butter; for frying

Some Notes about Ingredient Sourcing in Germany:

All the ingredients needed for this recipe can be easily bought from a local supermarket. I would add a few notes about some of the ingredients:

Bread Crumbs can be prepared at home by taking a few slices of sandwich bread and preparing crumbs in a mixie. If you want to store these crumbs for a longer time, take them out from the mixie and let them dry in the sun OR Spread them evenly on a baking tray and bake them in a preheated oven at 200 dec C for about 8-10 minutes. That would remove all the moisture. After it cools, store it in an air-tight jar. Alternatively, you can buy bread crumbs from the supermarket. It is called Semmelbrösel.

Milk powder is also available in supermarkets. It called Vollmilchpulver. I prefer the brand Nido. It is available in Indian stores too.

Method to make Rock Toast:

In a mixing bowl, add chopped onions, tomatoes and fresh coriander leaves. Mix.


Add salt, bread crumbs, red chilli flakes and milk powder. Mix.


Spread this mixture on a slice of bread. Press it with your hand so that the mixture doesn’t stay loose.


Heat and pan and put some butter. Keep the heat between low and medium for the rest of the steps. When the butter melts, spread it with a spatula.


Now, carefully put the bread, stuffing side down on the pan. If some of the stuffing comes out, push it in using a spatula. Let it cook for a minute or two.


Put some butter on the bread.


When the stuffing mixture ‘sets’ a bit, flip the bread and fry till the plain side develops a crust.


Flip once more to ensure that the stuffing is fully cooked. Remove and serve with ketchup.

A Variation

Put a cheese slice on the slice of bread.


Now spread the mixture and press it on the bread.


Then, follow the rest of the steps as mentioned above.

Instructions
