Creamy Egg Sandwich

Often, we have little time in the mornings to prepare elaborate breakfasts. Especially on busy days, we wish we had quick and easy recipes for healthy and sumptuous breakfasts to avoid skipping meals or eating outside.

Today’s recipe, Creamy Egg Sandwich, is for busy mornings. It is so easy to make and is ready in no time. In addition, it is delicious, healthy and, of course, homemade 🙂

Now, let’s start with today’s recipe: Creamy Egg Sandwich

Equipment Needed:

Ingredients needed to make Creamy Egg Sandwich: 

  • 8 Medium-Sized Eggs
  • 16 Slices White Sandwich bread
  • 2 tbsp Fresh Thick Cream
  • Salt; to taste
  • Butter; to apply on the bread slices
  • ½ tsp Crushed Black Pepper
  • 3 tbsp Finely Chopped Coriander Leaves

Method to make Creamy Egg Sandwich:

  • Boil the eggs. I prefer hard-boiled eggs for this recipe.


  • Cut the edges of the bread slices.


  • Toast them lightly on a grill or pan.


  • Apply butter on the slices and keep them aside.


  • Once the eggs are boiled, peel them and cut them roughly. Transfer them to a mixing bowl.


  • Mix eggs with salt, black pepper, coriander leaves, and fresh cream in the mixing bowl. Mix well.


  • Take a slice of bread. Spread a portion of the egg mixture on it. Cover with another slice of bread. This way, make all eight sandwiches.


  • Serve as is, or pair the sandwiches with tomato ketchup.

Some Additional Notes for my readers in Germany:

  1. Sandwich bread is readily available in all supermarkets. While American White bread works best for this recipe, you can also make these sandwiches with Vollkorn Sandwich Bread.
  2. I have used Schmand (fresh cream) in this recipe. It is thick and binds the stuffing ingredients well. You can also use Saure Sahne or Crème Fraîche.   3. I have hard-boiled the eggs for this recipe. If the egg yellow remains gooey, the taste of the sandwich changes, but if you prefer, you can try to make this with soft-boiled eggs. In supermarkets in Germany, you also get readymade boiled eggs. You can choose to buy them if you have no time to cook eggs in the morning.
