Sheer Khurma

Sheer Khurma is a delicious milk-based dessert from India. It is one of the easiest to make and takes less time than other desserts. It is also an ideal dessert for parties, especially if you have a lot of other things planned on the menu.

Sheer Khurma is also quite popular in the Muslim community in India. It is quite commonly prepared during the festival of Eid.

As mentioned before, this dessert has milk. In addition, it uses thin vermicelli, which is roasted in ghee and added. Nuts and dry fruits complete the dessert and make it rich and delectable.

Now, let´s start the easy peasy recipe for Sheer Khurma:

Equipment Needed:

Ingredients for Sheer Khurma:

  • 1 Lt Milk
  • 1 Pinch of Saffron Strands
  • 60 gm Thin Roasted Vermicelli, broken
  • 3 tbsp Ghee
  • 1 Handful Nuts (Cashews, Almonds, Pistachios)
  • 6-8 tbsp Refined Sugar (or, acc to taste)
  • 2 tbsp Kewda Water
  • 4-6 Green Cardamoms ( skin removed, seeds ground)

Method to make Sheer Khurma:

Boil milk in a thick-bottomed pan at medium heat for about 5 minutes. Add saffron strands and cardamom powder. Continue boiling.

In another pan, fry the broken vermicelli in 2 tbsp of ghee.

Once fried, add it to the boiling milk.

In the same pan, fry the nuts with 1 tbsp of ghee.

Once done, add it to the boiling milk.

Add sugar and cook for another 5 minutes. Stir in between to ensure the milk doesn’t stick to the pan. Turn off the heat. Add Kewda water and mix. Serve hot.

Additional Notes Ingredient Sourcing in Germany:

  • Milk: Use Frische Milch 3,5% Fett. It is available in supermarkets.
  • Saffron Strands: Available in Indian shops.
  • Thin Roasted Vermicelli: Available in Indian shops. It looks like this:


  • Ghee: You can buy ghee from any Indian shop or supermarket. You can even make it at home. Read my article: A guide to sourcing Ghee in Germany.
  • Nuts (Cashews, Almonds, Pistachios): These are easily available in supermarkets. You can also add dates, dried figs, raisins, etc., to Sheer Khurma.

  • Kewda Water: This is optional. It is available in Indian shops.
  • Green Cardamoms: These are available in Indian shops.
