Recipe for Ande Ki Bhurji

Ande Ki Bhurji, also known as Egg Bhurji, is a quick and easy recipe of scrambled eggs made the Indian way. It can be made in under 15 minutes, which includes preparation and cooking time. It goes well with rotis, bread and even as an accompaniment to dal and rice.

Here is the recipe for Ande ki Bhurji.

Ingredients needed to make Ande Ki Bhurji:

  1. Eggs: 6
  2. Oil:1 tbsp 
  3. Cumin seeds:1 tsp 
  4. Green Chilies: 2-3; Finely chopped 
  5. Onion: 1 Big; Chopped
  6. Tomato:1 Medium sized; Chopped
  7. Fresh Coriander Leaves: 2 tbsp, chopped
  8. Salt:1 tsp 

Method to make Ande Ki Bhurji:

Heat Oil in a pan. Add cumin seeds. When they crackle, add chopped green chillies. Fry for about 10 seconds.

Then add onions. On medium heat, fry them till they turn translucent.

Add tomatoes and fresh coriander leaves.

Add salt. Cover and cook on low heat till the tomatoes turn mushy.

On medium heat, continuously mix with a spatula and cook till the eggs are fully done.

Remove. Garnish with some more fresh coriander leaves and serve.
