Recipe for Chicken Sandwich with Indian Spices
Today’s recipe is my go-to recipe for my children’s lunchbox. It is easy to make, tastes good even when eaten cold and is delicious.
Parents often struggle to make children finish their lunch boxes. Often, food made with so much effort and love goes ultimately to waste either because children didn’t find it appetizing enough or because it was difficult for them to eat without creating a mess, or sometimes simply because they found something more interesting to do than eating!
As parents, one can hardly do anything about the latter part of the problem, but I have noticed that half of the battle is won if food packed in the tiffin is easy to eat. And in addition, if it is to their liking, they will surely return with an empty lunchbox.
Today’s recipe is one of my favourite lunchbox recipes. It is tasty and easy to eat. It is also easy and quick to make. So, let us start with the recipe:
Ingredients needed to make Chicken Sandwich with Indian Spices:
- 600 gm Chicken Breast, washed, pat-dried and cubed
- 150 gm Yoghurt
- Salt; to taste
- 1 tsp Kashmiri Red Chilli Powder
- 1 tbsp Coriander Powder
- ½ tsp Turmeric Powder
- ½ tsp Garam Masala Powder
- 1 tbsp Kasuri Methi (Dry Fenugreek Leaves)
- 1 tbsp Lemon Juice
- ½ tbsp Mustard Oil
- 12 Slices Sandwich Bread
- 2 tbsp Sunflower Oil; for frying the chicken
- 6 Cheese Slices
- Butter; to rub on the bread
Method to make Chicken Sandwich with Indian spices:
- Combine yoghurt, lemon juice, mustard oil, salt, Kashmiri red chilli powder, turmeric powder, coriander powder, garam masala, and kasuri methi in a mixing bowl. Mix
- Add the chicken pieces. Mix.
Note: You can keep this marinated chicken in a box (with a tight lid) in the refrigerator for 2-3 days. Every morning, take out the amount you need and keep the rest back in the fridge. - Heat oil in a pan. Add the chicken pieces. Fry them till they are cooked. Once cooked, let them cool a bit.
- Heat the sandwich maker. Apply butter on the surface of the bread slice that will face the grill.
- Fill the stuffing. Place a slice of cheese above it.
- Now cover with the other slice of bread and grill the sandwiches one by one.
- Chicken sandwiches are ready to be served. Let them cool on a wire rack before packing them in the tiffin.

Ingredients

- Add the chicken pieces. Mix.
- Heat oil in a pan. Add the chicken pieces. Fry them till they are cooked. Once cooked, let them cool a bit.
- Heat the sandwich maker. Apply butter on one side of each bread ( which will be outside).
- Fill the stuffing, followed by a slice of cheese.
- Now cover it with the other slice of bread and grill it.
- Chicken sandwich is ready to be served.
