Recipe for Marble Cake
About 15 years back, I attended a professional baking course in Bangalore, where I learnt to make many delicious baked goodies like bread, cakes, cookies, pastries etc. After the course ended, I tried a few recipes at home, and there were many that I forgot. But I safely kept my course notes and knew that I could go back to them anytime I wanted, and I would surely get the perfect results.
I have been living in Germany for a few years now. In these years, I have noticed German bakeries and supermarket isles loaded with varieties of bread and cakes. Some of the most common packaged cakes in supermarkets are Zitronenkuchen ( Lemon Cake), Marmorkuchen ( Marble Cake) and Schokoladekuchen ( Chocolate Cake). My frequent visits to German Supermarkets inspired me to review my class notes. Today’s recipe- Marble Cake, is inspired by these delicious cakes sitting on a quiet corner of the supermarket shelf, nestled between bread, waffles and other baked delicacies.
Usually, marble cakes are made with two flavourings- vanilla and chocolate. The batter is portioned out into a white batter and a brown batter. Then the two are poured into the baking mould and gently mixed. The resulting cake has a pattern resembling the pattern on marble, hence the name.
In my recipe, I have added coffee powder in addition to chocolate. It tastes delicious and is to my liking. You can skip it if you don’t prefer coffee in your cake.
Note that this cake has a mild sweetness. If you like your cake sweeter, add 50gm more sugar. Also, this cake tastes better the next day. You will also feel its sweetness a bit more the next day.
Also, after the cake is cooled completely, please keep it in an airtight container at room temperature. That way, it will not dry out and lose its moistness. It will also retain its taste.
So, let us start with the recipe:
Ingredients needed to make Marble Cake:
- 200 gm Unsalted, softened Butter
- 300 gm Refined Flour
- 4 Eggs, at room temperature
- 150 ml Milk, at room temperature
- 15 gm Baking Powder
- 200 gm Sugar
- 1 Pinch Salt
- 5 tsp Sweetened Cocoa Powder
- 1 tbsp Instant Coffee Powder
Method to make Marble Cake:
- Turn on the oven to 175 deg C. Let it preheat for about 10 minutes.
- Combine butter and sugar in a mixing bowl. Whisk them together.
- Now add salt. Add one egg, and whisk it. Then add another egg, then whisk further. That way, slowly add the eggs one by one and continue beating. Note that the batter can curdle if you add all the eggs together.
- Then add baking powder and 150 gm flour. Whisk further.
- Now add 100 ml milk and the rest of the 150 gm flour. Whisk and mix well.
- Now, remove about 1/3 of this batter and transfer it to another mixing bowl.
- In that mixing bowl, add 50 ml of milk, cocoa powder and coffee powder. Mix well.
Now you have 2/3 of the batter in one mixing bowl. This batter is white.
You have 1/3 of the batter in another mixing bowl. This batter is brown. - In a baking mould, pour in 1/2 of the white batter. I used a silicon mould, so I didn’t grease or dust it. If you use a tin mould, please grease and dust it before you pour the batter.
- Then put the brown batter.
- Now add the rest of the white batter.
- Gently form waves with a spatula and level the batter by tapping the mould.
- Transfer the mould to the preheated oven and bake the cake for about 55-60 minutes. After 50 minutes, insert a toothpick and check. If it comes out clean, your cake is ready. If it doesn’t, bake for some more time. By approximately 60 minutes, the cake should be ready.
- Cool on a wire rack. Slice when completely cooled.
