Open Sandwich with Eggs and Avocados

Today, I am sharing the recipe for a breakfast that has become quite a favourite in my home. Open Sandwiches with Eggs and Avocados are easy to make, require little time, and are tasty and nutritious.

First, let me take you through the ingredients needed to make Egg and Avocado Open Sandwich:

Ingredient Sourcing in Germany:

You need basic, everyday ingredients to make this delicious breakfast.

In addition, you need fresh bread.

Let me take you through each one in detail:

  • Avocadoes: In Germany, you can buy them individually or in a pack of 3-4. I prefer buying the pack because, in terms of cost, the pack is more reasonable. Buy the ones that are green and firm. After bringing them home, remove them from their packaging and let them rest in your fruit basket at room temperature for a few days. Check them every day. Then the skin darkens, and they feel soft; they are ready to be consumed. Cut them from the middle, remove the seed and separate the flesh from the peel with a spoon. It comes out quite easily. Then mash/chop the fruit as per your preference.
  • Eggs: Hard-boiled eggs work best for this recipe. To make hard-boiled eggs, bring water to a full boil. Then, carefully drop all the eggs into the boiling water and boil for 8-10 minutes. Then, discard the water and add fresh water. Let the eggs rest in fresh water for 5 minutes. Then, peel them and use them as per your requirement.   • Onion, Tomatoes, and Lemon: They are all easily available in supermarkets in Germany.
  • Green Chillies and Fresh Coriander Leaves: Available in Indian shops in Germany.
  • Salt, Black Pepper Powder and Red Chilli Flakes: All are available in supermarkets in Germany. Read my article about Salt here.
  • Cream Cheese: I use Frischkäse. It is available in the refrigerator section of supermarkets. Both normal and low-fat versions are available. Choose what you like. Read my article about fresh cheeses here to learn more.
  • Bread: I prefer fresh bread from the bakery. Sourdough bread tastes great. In this recipe, I have shown Dinklevollkornbrot, which i bought from a local bakery. You can learn more about bread in Germany here.

Now, let’s start the recipe.

Equipment Needed:

  • Mixing Bowl and Spatula
  • Saucepan for boiling eggs
  • Pan for toasting bread
  • Knives and Cutting Board

Ingredients for Eggs and Avocado Open Sandwich:

  • 2 Ripe Avocadoes; peeled, pitted and chopped
  • 8 Hard Boiled Eggs; peeled and chopped
  • 1 Medium-Sized Onion; chopped
  • 1 Medium-Sized Tomato; chopped
  • 2-3 Green Chillies; finely chopped
  • 2-3 tbsp Finely Chopped Fresh Coriander Leaves
  • 2 tbsp Lemon Juice
  • 1 tsp Salt
  • ⅓ tsp Black Pepper Powder
  • ½ tsp Red Chilli Flakes
  • 1-2 tbsp Cream Cheese

Additionally

  • 10-12 Slices of Bread
  • Butter; to apply on the bread while toasting

Method to make Eggs and Avocado Open Sandwich:

  • In a mixing bowl, combine all the ingredients.


  • Apply butter on the bread and toast it.


  • Spread the avocado-egg-other ingredients mix on the toasted bread and serve.
