Recipe for Flammkuchen
Flammkuchen is a baked delicacy from the Alsace region in eastern France. This region was earlier a part of Germany, and it was there that this dish is said to have originated. Flammkuchen may look like a thin-crust Pizza to those new to Germany, but it is pretty different. To start with, Flammkuchen doesn’t have yeast, so the dough does not rise and is not ‘bready’. Flammkuchen is also lighter and has a milder taste, which comes from the olive oil used in the dough and the rich sour cream smeared on it before it is baked.

Recently, after eating Flammkuchen at Spargelfest near Darmstadt, I was inspired to try this recipe at home. The Flammkuchen I ate there was full of flavour and tasted terrific. I came home and tried my best to recreate the dish. So, here goes the recipe:
Ingredients Needed for making about 8 medium-sized Flammkuchen:
Ingredients for the dough:
- 500 gm Refined Wheat Flour (Wiizenmehl Type 550) or Spelt Flour (Dinkelmehl 630)
- 3 Egg Yellows
- 225 ml Lukewarm water
- 4 tbsp Olive Oil
- 1 tsp Salt
Ingredients for the Topping:
Vegetarian
- Green Asparagus; thinly sliced and seasoned with salt and black pepper
- Onions: Thinly sliced and seasoned with salt and pepper
- Sour Cream ( Crème Fraîche or Schmand) to smear on the flammkuchen before baking
- Fresh or dry Chives (Schnittlauch)
- Any Salad Greens; for garnishing
- Salt; to taste
- Crushed Black Pepper; to taste
Meat Variant
- Bacon
- Onions: Thinly sliced and seasoned with salt and pepper
- Sour Cream ( Crème Fraîche or Schmand) to smear on the flammkuchen before baking
- Fresh or dry Chives (Schnittlauch)
- Any Salad Greens; for garnishing
- Salt; to taste
- Crushed Black Pepper; to taste
Method to make Flammkuchen:
1. Combine flour and salt.
2. Add eggs. Mix well.

3. Add water and knead a smooth dough.
4. Add oil and massage, and knead the dough for 7-8 minutes. 

5. Cover and rest the dough for an hour.
6. After the dough has rested, divide it into 8 parts. 
7. Take a portion. Cover the rest of the dough. Roll the dough portion. Roll it thin. Use dry flour to help with rolling. 
8. Spread a generous amount of sour cream on the rolled dough. Sprinkle some salt.
9. Put the toppings of your choice. Sprinkle salt and pepper. 

10. Bake at 250 degrees C for about 15 minutes or until golden brown. Note: the oven should be preheated at 250 °C for 10 minutes.

11. Garnish with any salad that you prefer, and serve.

Instructions
- Combine flour and salt.

- Cover and rest the dough for an hour.
- After the dough has rested, divide it into 8 parts.
- Turn on the oven. Preheat it at 250 deg C for 10 minutes.
- Roll the dough. Roll it thin. Use dry flour to help with rolling.
- Spread a generous amount of sour cream on the rolled dough. Sprinkle some salt.
- Put the toppings of your choice.
- Bake at 250 deg C for about 15 minutes or until golden brown.
- Garnish with any salad that you prefer, and serve.
