Open Sandwich with Avocado Cream

Ingredients Needed:
- 12 Bread Slices
- Avocado Cream
- 8 Hard Boiled Eggs
- 1 Medium-Sized Onion; Finely Chopped
- 1 Medium-Sized Tomato; Finely Chopped
- ½ Medium-Sized Red Paprika Finely Chopped
- ½ Medium-Sized Green Paprika Finely Chopped
- 2 tbsp Finely Chopped Pickled Gherkins
- 2 tbsp Finely Chopped Fresh Coriander Leaves
- Salt for seasoning
- Crushed Black Pepper for seasoning
Method:
Combine chopped onion, tomato, paprika, coriander, and pickled gherkins.
Toast the bread. Or, if you like cold sandwiches, use them without toasting. Spread a generous amount of avocado cream. Spread a layer of finely chopped veggies. Top it with sliced hard-boiled eggs. Season with salt and black pepper.
