Recipe for Flammkuchen with Asparagus and Onions
Flammkuchen is a baked delicacy from the Alsace region in eastern France. This region was earlier a part of Germany, and it was there that this dish is said to have originated. To those who are new to Germany, Flammkuchen may look like a thin crust Pizza, but in reality, it is quite different. To start with, Flammkuchen doesn’t have yeast, so the dough does not rise, and hence it is not ‘bready’. Flammkuchen is also lighter and has a milder taste, which comes from the olive oil used in the dough and the rich sour cream that is smeared on it before it is baked.
Recently, after eating Flammkuchen at Spargelfest near Darmstadt, I was inspired to try this recipe at home. The Flammkuchen I ate there was full of flavour and tasted terrific. I came home and tried my best to recreate the dish. So, here goes the recipe:
Ingredients Needed:
Ingredients for the dough:
- 450 gm Refined Wheat Flour (Type 550)
- 2 Egg Yellows
- 200 ml Lukewarm water
- 3 tbsp Olive Oil
- ½ tsp Salt
Ingredients for the Topping:
- 20 Stems White and Green Asparagus
- 2 Medium-Sized Onions
- 1 tbsp Olive Oil
- ½ tsp Freshly Crushed Black Pepper
- Salt; to taste
- 200 gm High Fat Sour Cream ( Crème Fraîche or Schmand)
- Any Salad Greens; for garnishing
Method:
- Combine Flour, salt, Egg yellows and water and knead into a smooth dough.
- Stretch and knead the dough for about 5-8 minutes. Add olive oil. Knead again.
- Rest the dough for 30 minutes.
- Meanwhile, prepare the vegetables. Thinly slice the onions and keep them aside. Remove the woody parts of the asparagus. Slice them thinly.
- Combine the white and green asparagus. Add salt, pepper and olive oil to the asparagus. Mix well.
- After the dough has rested for 30 minutes, knead once again and portion out the dough.
- Take one portion and roll it thinly. Place the rolled dough on a greased baking plate. Spread Crème Fraîche or Schmand.
- Then spread the veggies evenly.
- Place in a preheated oven and bake for about 12 minutes at 250 deg C. Once baked, cut with a pizza cutter. Garnish with any salad that you prefer, and serve.
