7 Cups Barfi

It is festival time in India, and Diwali is just around the corner. It is time to make sweets and savoury dishes; savour them and share them with your loved ones.

Today, I made 7 Cups Barfi. This is a sweet that is made almost every Diwali in my home. It is easy to make. The recipe is also easy to remember because it is in its name. The recipe uses 7 cups of ingredients: 1 Cup of Gram Flour (Besan), 1 Cup of Grated Coconut, 1 Cup of Milk, 1 Cup of Ghee and 3 Cups of Sugar. However, if you like your desserts moderately sweet, I would recommend reducing the sugar to 2 1/2 cups instead of 3 cups, and you can add 1/2 a cup of powdered nuts. Cashews and almonds work well for this recipe.

Let’s start with the recipe:

EQUIPMENT

INGREDIENTS  

  • 1 Cup Gram Flour
  • 1 Cup Grated Coconut
  • 1 Cup Milk
  • 1 Cup Melted Ghee
  • 3 Cups Sugar
  • 1 tsp Cardamom Powder

INSTRUCTIONS 

  • Put all the ingredients in a pan. Mix.


  • On high heat, cook them. Stir and Mix continuously, or else it can stick to the base and burn.


  • After about 10 minutes, reduce the heat to medium and continue cooking. Mix continuously.


  • After about 30 minutes, you will see that the mixture starts coming together and releasing a lovely aroma.


  • Add cardamom powder and mix.


  • Turn off the heat and transfer this mixture immediately to a greased plate. Press with a rolling pin so that the surface gets smoothened.


  • While the mixture is hot, cut it into pieces.


  • Once it is cooled, remove the pieces. Store in an air-tight container.

Some Additional Notes:

  1. As I mentioned earlier, if you like your desserts moderately sweet, reduce the sugar to 2.5 Cups instead of 3 Cups.
  2. You can also add about 1/2 a cup of Powdered Nuts. Grind cashews and almonds to a fine powder in a mixie.
  3. It is best to use a nonstick pan to make this barfi. If you use any other pan (steel, iron, etc), the chances of the mixture sticking to the base of the pan are high.
  4. Constantly mixing is very important. When making this barfi, you can’t take up any other work parallelly. Before starting to make this barfi, grease the plates and keep them ready. Then start making the barfi.
  5. When the cooked mixture leaves the pan, which typically happens around 30 minutes of cooking, turn off the heat.
  6. Once you turn off the heat, you have to be quick in transferring the mixture to a greased plate, levelling and smoothening the surface with a rolling pin and cutting it. So, keep all the things ready before you start making them.
  7. For my readers in Germany: I used fresh milk with 3.5% Fat for this recipe ( Frische Milch 3,5% Fett). For sugar, I used Rubenzucker. You can even use Rohrzucker. For coconut, I used fresh, grated coconut (easily available in Indian shops). You can also use Kokosraspel (easily available in supermarkets). I used gram flour from an Indian shop. TRS Gram Flour works well.
