Besan Murukku
Murukku is almost synonymous with the festival of Diwali for many in India. Like many Indian homes, this delicious snack is made without fail every Diwali, and, somehow, Diwali feels incomplete without it.
On the days leading to this festival, people make various dry snacks. About a week before Diwali, people start cleaning their homes and making snacks to be savoured before and after Diwali. These snacks are also exchanged with family and friends on Diwali day.
There are many recipes for Murukku. In my home, Murukku is most commonly made with Rice and Urad Dal flour. However, I love experimenting and trying out different recipes in my kitchen, so this year, I decided to make Murukku with gram flour instead of Urad Dal flour. There was one more reason for it. Usually, in the Indian store near my home, I get Urad Dal Flour quite easily, but due to the Diwali rush, it was out of stock by the time I went to buy my Diwali groceries. Fortunately, I was able to get Rice Flour. So, I decided to combine rice flour and gram flour to make these delicious murukkus.

Ingredients needed to make Besan Murukku:
- 2 Cups Rice Flour
- ⅔ Cup Besan (Gram Flour)
- 2 tbsp Butter; for room temperature
- 1½ tsp Kashmiri Red Chilli Powder
- 2 tsp Sesame Seeds
- 1 tsp Salt
- ¼ tsp Asafoetida
- Water for kneading
- Oil; for frying
Method to make Besan Murukku:
- In a mixing bowl, combine rice flour, gram flour, salt, red chilli powder, sesame seeds and asafoetida.
- Then add water and knead it into a smooth dough.
- Grease the Murukku Press. Put this dough into it.
- Release portions of the dough into hot oil. Fry them on medium to high heat. Flip them when they are done on one side.
- Remove them when they slightly change colour and become crispy.
- Once they cool, you can store them in an airtight jar.
About Ingredient Sourcing in Germany:
- You can buy rice flour from either an Indian shop or supermarkets in Germany. Rice Flour is called Reismehl in German.
- Besan (gram flour) can be bought from Indian shops. Some Turkish shops stock it too. But don’t confuse it with Chickpea Flour (Kichererbsenmehl) that you get in supermarkets. That is not gram flour.
