Recipe for Boondi Raita
Today’s recipe is Boondi Raita.
Raita is a popular Indian side dish in which yoghurt is combined with vegetables, fruits or fried gram flour balls (Boondi). As the name reveals, Boondi Raita is made with Boondi. Boondi is prepared by deep-frying a runny batter made from gram flour (besan). Gram flour is combined with spices and water, and a runny batter is prepared. This batter is passed through a slotted spoon and dropped into hot oil. As soon as the batter falls into hot oil, it disperses into tiny spheres. These are fried till crispy. These crispy fried balls are called Boondi in Hindi. They are eaten as a snack and can be used in various recipes.
Raita can be paired with pulav, biryani, or paranthas; it’s your choice. I recently made this delicious raita and paired it with steamed rice, Black-Eyed Peas gravy and my favourite salad. The combination tasted great!

You can check out Pulav recipes on my blog. Boondi raita pairs perfectly with all of them.
