Recipe for Moist Lemon Cake

Lemon Cake is one of my favourites. I tasted it for the first time in Germany when I picked it up from the supermarket shelf and at once fell in love with it.

In Germany, it is common to find packaged cakes such as Lemon Cake, Marble Cake and Chocolate Cake in supermarkets. You also get cake mixes, which make it pretty easy to make these delicious cakes at home. Amongst cake mixes, Chocolate Cake and Lemon Cake are again, some of the common ones. These cakes taste great and are a perfect accompaniment to your evening coffee.

Recently, when I was trying out different Flour mixes, I came across a product called Hammermühle glutenfrei Mehl Mix hell, a gluten-free flour mix. I followed the instruction on the pack to make a Lemon Cake. It was a moist, melt-in-the-mouth cake and super delicious. After trying that out, I was inspired to follow a similar recipe with standard refined flour, and the result was equally satisfying. Today’s recipe is not gluten-free. The Lemon Cake recipe that I am sharing today is made using refined flour (Type 405). It is so easy to make that I now wonder why anyone would buy the prepackaged ones from supermarkets. Though they are tasty, they have preservatives, food colours etc. You can avoid these altogether by making cakes at home.

Let’s start with the recipe for Lemon Cake:

Kitchen Equipment:

Ingredients for Moist Lemon Cake:

  • 300 gm Refined Flour (Type 405 in Germany)
  • 250 gm Unsalted Butter/Margarine; at room temperature
  • 200 gm Sugar
  • 1 Pk Vanilla Sugar
  • 4 Eggs ; at room temperature
  • 1 Lemon; Zest and Juice
  • 1 Pk Baking Powder (15gm)
  • 1 Pinch Salt
  • 60 ml Milk (3.5% Fat)

Ingredients for Frosting:

  • 200 gm Powdered Sugar
  • 1 Lemon; Juice Extracted

Method to make Moist Lemon Cake:

Turn the oven to 180 °C and preheat it for 10 minutes. While the oven preheats, prepare the cake batter.

In a big mixing bowl, combine sugar, vanilla sugar and butter. Whisk them together.

Add eggs- one at a time and whisk to make a smooth batter. ( Add one egg, whisk, then add the next, whisk. That way, whisk in all four eggs).

In a separate mixing bowl, combine flour, salt and baking powder

Add this flour mix to the whisked sugar, butter and eggs.

Now add milk, lemon zest and lemon juice. Use a spatula to mix everything.

Grease and dust the baking mould. Pour the batter into it. Tap it to even it out and remove the air bubbles.

Bake at 180 °C for about 50 minutes. After 50 minutes, insert a toothpick and check. If it comes out clean, the cake is baked. If you see batter stuck to the toothpick, bake for more time. Do the toothpick test again and remove the cake from the oven when done. Let the cake cool in the baking mould for about 15 minutes.

Then gently remove the cake and transfer it to a wire rack.

Prepare the frosting by combining powdered sugar with lemon juice.

Pour this evenly on the cake. Leave it like that for about 10 minutes.

Now, the cake is ready to be sliced.

Delicious and moist Lemon Cake is ready!
